Healthy Banana Muffins

Sugar-free eating is HARD. I find myself needing to make so many foods from home now, and I’ve been altering a lot of old favorite recipes to fit our dietary needs. (For more on why we’re going sugar free, see my summer 2018 blog post)  

I am a complete sucker for a good muffin and my toddler is a huge fan of these!  Nothing beats a warm muffin straight from the oven. We love whipping these up (it takes about 15 minutes!) and I love that they don’t have any sugar in them, unless you add chocolate chips. Super healthy, super clean, super delicious.

These are very easy to make vegan/gluten free/dairy free too - just follow the substitution directions at the bottom of this post!

Ingredients:

1 3/4 cups non gmo flour (We like this one)  

1 teaspoon baking soda

1/2 teaspoon baking powder  

1/4 teaspoon salt  

1/2 teaspoon cinnamon  

1/4 teaspoon cloves

1/4 cup melted butter  

1 egg

 1 teaspoon vanilla extract 

2 large bananas, mashed  

4 tablespoons milk

5 tablespoons maple syrup  

1/2 cup dark chocolate chips  (optional) 

Directions: 

Heat oven to 375F. In a medium bowl, mix the flour, baking soda, baking powder, salt, and spices. 

In a large bowl, combine the melted butter, egg, bananas, vanilla, maple syrup, and milk. Beat with a fork until we’ll blended.  

Gradually add the flour mixture until everything is moistened. Add chocolate chips. Spoon the batter into muffin papers. Bake 20 minutes or until golden brown on top.  Serve warm! 😋

Substitutions:  

vegan + dairy free - use Enjoy Life chocolate chips, swap milk with watered down coconut milk or almond milk, swap butter for a vegan butter substitute or coconut oil. 

gluten free - make sure your chocolate chips are gf friendly and swap the flour for an equal amount of all purpose GF flour (like this one or this one.)
